Meal Deal Monday-Honey Chicken Enchiladas

Starting up my Meal-Deal Mondays again. For those who are new to my blog, I make a meal for a family of 4 for less than $5! You can check out my previous Meal Deal Mondays HERE.

Today, I am making Honey Chicken Enchiladas. Sorry no picture this week! This was adapted from alot of different recipes I've tried over the years but similar to the one HERE from allrecipes. Its different the the regular enchiladas.

The total for this week was over the $5 mark-$5.52 but it does feed up to 6. ;)

Ingredients-

4 tablespoons of honey, $0.23- Use the coupon for $.55 off from Here. Wal-Mart has this honey for $3.28(seriously, honey is high!!) Making it $2.73 for a 12 oz bottle bottle.

2 cloves of garlic, $0.12 - Use coupon for $1.00 of McCormick seasoning and bought minced garlic. Wal-Mart has the smaller for $2.12. Making it $1.12.

4 cups of mont. jack cheese, $2.00 - Use coupon for $1.00/2 HERE. My local grocery store has Kraft on sale for $1.50 each. Price matched at wal-mart because grocery store doesn't take Internet coupons. Making it $2.00 for 2 bags of cheese.

6 flour tortillas, $0.60- The best thing that I have found for tortillas is to go to a local Mexican store. They sell tortillas(both flour and corn) extremely cheap! Plus it taste alot better!

1 cup green enchilada sauce, $0.88- Great value. Occasionally you can find coupons in the Sunday paper for sauce but the great value usually is still cheaper.

1/2 cup milk, $0.44-Just great value again. ;)

2 cups shredded cooked chicken, $1.25. Honestly I wasn't sure how to price this. Whenever chicken goes on sale, it's a great idea to boil it with some onions and carrots to make chicken broth. Then not only do you have the cooked chicken ready but you also don't have to buy the broth!

Directions

1.Mix the honey, chicken, and garlic togather until well coated. Refrigerate overnight to marinate.
2.Preheat oven to 375. Grease a casserole dish(I use 9x9) Spread 1/2 cup of enchilada sauce on the bottom of the dish.
3. Combine chicken with 3 cups of cheese. Spoon the chicken mixture evenly over the 6 tortillas. Roll tortillas and place in casserole dish.
4. Take remaining 1/2 cup enchilada sauc, milk and pour over tortillas. Sprinkle with remaining cheese.
5. Bake for 25 minutes!!

Meal Deal Monday

Okay so I thought I would start something new for Monday's. In addition to all the bargains I thought I would post a bargain meal. I will include how much it cost me and I plan on keeping it lower than $5 for a family of four.

*Here is the recipe for the week-MEXICAN PIZZA- Total Price $2.69 for a family of 4!*

Ingredients-

*
1-8 count can of crescent rolls. Price- $0.24 or $1.74. Wal-mart has the 4-ct priced at $1.12 for.I used 2 of my $1 off 1(no longer available but there is a $0.50 off of 2 HERE.

*1/2 package of cream cheese.Price- $.61.( Great value is $1.22 so split that price)

*1/2 lb ground turkey seasoned with taco seasoning-Price- $0.50.( This is not located with the regular hamburger meat. It is packaged like sausage and located in the middle freezer island-1lb for $1-can't beat that!)

*1/2 cup cheddar cheese.Price $0.42. Wal-mart has the great value cheese at $1.68 for 2 cup bag.

*1/2 cup shredded lettuce.Price $0.28 Buy the whole lettuce and just shredd it yourself. Saves alot of money!

*1/2 cup olives.Price $0.64. Buy the whole olives and slice them yourself. Again saves money.

*1/2 cup sour cream-Price $0.61. Wal-Mart's great value brand. I have a hard time finding good coupons for sour cream! Sometimes Daisy has them though so be on the lookout!

1.Unroll crescent roll dough and place in an ungreased 15-in. x 10-in. x 1-in. baking pan. Flatten dough to fit the pan, sealing seams and perforations. Bake at 375 degrees F for 8-10 minutes or until light golden brown; cool. In a small bowl, blend cream cheese and sour cream with a wire whisk; spread over crust. Chill 30 minutes.
2.Meanwhile, in a skillet, brown turkey; drain. Spread over cream cheese mixture. Top with olives, cheese and lettuce. Cut into serving-size pieces. Serve immediately or refrigerate.

So your total to feed a family of 4 would be $2.69 or if you didn't have those $1 off then it would be $4.19! You can't feed one person to dinner on that going out!
