Meal Deal Monday-Honey Chicken Enchiladas

Starting up my Meal-Deal Mondays again. For those who are new to my blog, I make a meal for a family of 4 for less than $5! You can check out my previous Meal Deal Mondays HERE.

Today, I am making Honey Chicken Enchiladas. Sorry no picture this week! This was adapted from alot of different recipes I've tried over the years but similar to the one HERE from allrecipes. Its different the the regular enchiladas.

The total for this week was over the $5 mark-$5.52 but it does feed up to 6. ;)

Ingredients-

4 tablespoons of honey, $0.23- Use the coupon for $.55 off from Here. Wal-Mart has this honey for $3.28(seriously, honey is high!!) Making it $2.73 for a 12 oz bottle bottle.

2 cloves of garlic, $0.12 - Use coupon for $1.00 of McCormick seasoning and bought minced garlic. Wal-Mart has the smaller for $2.12. Making it $1.12.

4 cups of mont. jack cheese, $2.00 - Use coupon for $1.00/2 HERE. My local grocery store has Kraft on sale for $1.50 each. Price matched at wal-mart because grocery store doesn't take Internet coupons. Making it $2.00 for 2 bags of cheese.

6 flour tortillas, $0.60- The best thing that I have found for tortillas is to go to a local Mexican store. They sell tortillas(both flour and corn) extremely cheap! Plus it taste alot better!

1 cup green enchilada sauce, $0.88- Great value. Occasionally you can find coupons in the Sunday paper for sauce but the great value usually is still cheaper.

1/2 cup milk, $0.44-Just great value again. ;)

2 cups shredded cooked chicken, $1.25. Honestly I wasn't sure how to price this. Whenever chicken goes on sale, it's a great idea to boil it with some onions and carrots to make chicken broth. Then not only do you have the cooked chicken ready but you also don't have to buy the broth!

Directions

1.Mix the honey, chicken, and garlic togather until well coated. Refrigerate overnight to marinate.
2.Preheat oven to 375. Grease a casserole dish(I use 9x9) Spread 1/2 cup of enchilada sauce on the bottom of the dish.
3. Combine chicken with 3 cups of cheese. Spoon the chicken mixture evenly over the 6 tortillas. Roll tortillas and place in casserole dish.
4. Take remaining 1/2 cup enchilada sauc, milk and pour over tortillas. Sprinkle with remaining cheese.
5. Bake for 25 minutes!!
