Meal Deal Monday


Today we are going to be making Creamy Corn Chowder. Seriously, don't scowl, it's good!!!

The whole meal cost me a total of$2.84 to make and it serves 8 . Thats a total of only $0.35 a person!!! That is so good!




Ingredients


6 slices bacon, cut into 1-inch pieces - Use coupon from HERE to get $1 off. Final price-$0.22
1 medium onion, chopped - $0.30 at Wal-Mart
2 stalks celery, chopped - $0.25 at Wal-Mart
1 medium red bell pepper, seeded and chopped -$0.78 Price match from Harvest foods
3 medium red potatoes, diced - A whole bag of Red potatoes are $1.99 at Wal-mart. 3 potatoes would be around $0.34
1 (1 lb.) bag frozen corn kernels, thawed - Use $0.35/1 insert coupon from 5/16/10 to get Steamfresh bag for only $0.45
1 teaspoon dried thyme - free pantry
Salt and pepper -free pantry
1/3 cup all-purpose flour -free pantry
6 cups chicken broth -free chicken broth from freezer.(always when cooking chicken, make broth to freeze so you never have to buy broth again. Save money and tastes better!)
1 bay leaf -free pantry
1 cup milk- $0.50(how sad is milk is the most expensive thing on the list!!!)


Directions


Preparation
In a 4-quart soup pot, cook bacon over medium-high heat, stirring, until brown and crispy, about 5 minutes. Pour off all but 2 Tbsp. fat.
Add onion, celery and bell pepper and cook, stirring, until softened, 4 to 5 minutes. Add potatoes, corn, thyme, salt and pepper. Stir to combine.
Sprinkle flour over mixture and stir until thickened and fragrant, about 3 minutes.
Slowly pour in broth, stirring constantly until smooth. Add bay leaf; bring to a boil. Reduce heat; simmer until potatoes are tender, 25 minutes.
Remove bay leaf and stir in Milk. Cook until warmed through.
